Ingredients:
1 lb pork sausage, browned & drained
(Cooking spray)
1 ½ c shredded cheddar cheese, divided
1 small onion, chopped
4.5 oz can chopped green chiles
12 eggs
(Salt, pepper & garlic powder to taste)
1 lb 10 oz pkg hash brown potatoes
8 – 10 peaches
(1 t each: sugar, lemon juice)
Directions:
Heat oven to 375o. Spread sausage in a greased 9×13” baking dish. Layer with half of the cheese, then the onion, chiles and the remaining cheese. Beat the eggs with the salt, pepper & garlic powder; pour evenly over everything. Bake for 30 min or until set. Let stand 10 min before cutting. Cook hash browns according to package directions. Slice peaches. Sprinkle with sugar; drizzle 1 t lemon juice. Chill and serve.
