Ingredients:

1 packet of prosciutto stuffed fagottini (Trader Joe’s)

2 cups of spinach

1 cup of sundried tomatoes, chopped

1/4 cup of onions

1/4 cup of garlic

1/4 cup of shallots

3 tablespoon of olive oil

3 tablespoons of Balsamic vinegar

Parmesan cheese (optional)

Preparation:

Bring 2 quarts of salted (optional) water to a boil, add fagottini and bring to a second boil, then remove from water after about seven minutes. Drain.

In a sautee pan, pour one tablespoon of olive oil and add your onion, garlic and shallots. Cook until brown, then add in your spinach. Once they wilt, pour the oil, onions, garlic and shallots into your bowl with the pasta. Add your vinegar, the rest of your olive oil and sundried tomatoes. Mix until everything shines from the olive oil, salt and pepper to taste, then sprinkle with parmesan cheese. Enjoy!
