2 c oil-and-vinegar dressing, divided

3 lbs boneless, skinless chicken breasts

6 Roma tomatoes, chopped

2 large red onion, sliced ¼” thick, do not separate rings

(Cooking spray)

2 – 10 oz bags mixed greens

1 English cucumber, cut in ½ lengthwise & thinly sliced

8 – 12 ears corn, shucked, cut in half if desired

(Cooking spray)


(Salt & pepper to taste)

1 large watermelon, chilled & cut up



Preheat outdoor grill. Pour 1 c dressing over chicken, marinate 15 min. Pour 1 c dressing over tomatoes; set aside. Spray onion slices with cooking spray. Grill 8-10 min or until tender, turning once while cooking. Remove from grill. Grill chicken 5-7 min per side, or until cooked through. Slice chicken into strips. In large bowl combine greens & cucumber. Top with chicken & grilled onions. Cover with tomato vinaigrette. Coat grill rack with cooking spray & preheat. Grill corn 12 min or until done, turning occasionally. Season with butter, salt & pepper. Cut and serve watermelon.
