Ingredients:

2 cups of your leafy green of choice

1 medium mango

croutons (optional)

For Oven-Fried Chicken:

6 tablespoons butter

8 pieces of lean chicken (white or dark meat)

1 1/2 cups flour

1 teaspoon cayenne pepper

1 teaspoon of cinnamon

1 teaspoon of sugar

2 teaspoons garlic salt

2 teaspoons oregano

2 eggs

1/2 cup dried bread crumbs

Directions For Oven-Fried Chicken:

Preheat oven to 375 degrees. Melt butter in 2 x 9 x 13 inch baking dish. In a shallow bowl combine flour, cayenne, garlic salt and oregano. In another shallow bowl beat eggs. Dip chicken into flour mixture, then dip in chicken into egg. Roll chicken in bread crumbs. Place chicken in dish and turn to coat with butter. Bake for 30 35 minutes. Rotate after 15 minutes.

Chop your mango in small cubes. Plate your greens and put your mango and chicken on top.
