1 pack of Italian sausage (Sweet or Spicy, depending on your taste)
1/2 box of Ditalini pasta
1 bag of Kale
1/2 bag of white potatoes
1 pack of mushrooms
1 box of chicken broth
Bring your chicken broth to a boil and add your potatoes (peeled and cut down to size of your choice). Simmer and add salt and pepper to taste. Sautee your chopped onions and mushrooms, add them to your soup once they are almost cooked.
Cut your sausage into bite-size pieces and sautee them in a pan with a tsp of olive oil until cooked through. Do not drain once cooked, pour contents of pan into your soup. Add kale as your soup simmers for at least 30 minutes. Cover and allow to simmer.
Boil your Ditalini for 5 minutes, drain and add to your soup. Serve and enjoy!
