White House pastry chef Bill Yosses (pictured) is quitting his illustrious job in June, and he’s taking the First Lady’s blueprint for healthier fare with him.

Yosses, who refers to Mrs. Obama as an “inspiring boss,” is an admirer of her crusade against sugar and fat-ladened foods, and will be incorporating it when he moves to New York to work on a food literacy project that will teach people how to eat healthy, according to The New York Times.

The 60-year-old chef, has been creating sweet masterpieces at the White House since 2007, but they weren’t always Lady O approved. He was originally hired by former First Lady Laura Bush to make his signature cookie plates and riveting sugar sculptures. When Mrs. Obama arrived at the White House, she reportedly requested that Yosses not only make healthier offerings but also use smaller plates in which to serve them.

Even though Yosses began trimming the fat and sugar from his desserts, such as using agave and honey to replace sugar and fruit puree to take the place of butter, admittedly, he was never really too keen on the idea. “I don’t want to demonize cream, butter, sugar, and eggs,” Yosses told The New York Times, noting that his departure from the White House is a “bittersweet decision.”

Still, Yosses told the news outlet that his soon-to-be former boss always made her healthful suggestions without being pushy or demanding, “[Mrs. Obama] has done it with humor and good will, without preaching, just the way you would hope the ‘Mom-in-chief ‘would do,” he quipped.

About Yosses departure, Mrs. Obama released a statement saying she was “incredibly sad to see Bill Yosses go”:

I am also so grateful to him for his outstanding work, not just as the White House pastry chef, producing the most delectable creations for everything from birthday celebrations to state visits, but also as a key partner helping us get the White House kitchen garden off the ground and building a healthier future for our next generation. I wish Bill and his husband, Charlie, all the best in their future endeavors.”

Yosses, who was given the nickname “The Crustmaster” by Barack Obama himself, says the President is grateful for his culinary masterful skills especially at Thanksgiving, when he bakes 5 or 6 pies.

Now Yosses will pack up his kitchenware and head for the Big Apple, where he will join his husband of two years, Charlie Jandusay Fabella Jr., a teacher. As far as what exactly Yosses’ new venture is, mum’s the word.
