Lunch On Fleek: Santa Fe Chicken Rice Bowl
Why go to Chipotle when you can make your own healthy rice bowl! Well balanced and delicious!
Skip the tortilla, pack this south of the border favorite and stop wasting your lunch break waiting in long fast food lines.
Santa Fe Chicken Rice Bowl
1-2 cups of spring mix
3 oz of cooked chicken breast
1/3 cup of black beans (I used canned, drained and rinsed)
1/3 cup of brown rice
1/4 cup of roasted onions and peppers
1 tablespoon of fresh salsa or pico de gallo
Prep the chicken, rice, black beans, grilled peppers and onions the night before, so come morning all you have to do it pack and go. Then when lunch time comes toss all the ingredients in a medium bowl and indulge!
