Ingredients

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen whole-kernel corn, thawed, or fresh corn kernels (1 ear)
  • 1 (14.4-ounce) can fire-roasted diced tomatoes, with juice
  • 2 garlic cloves, minced
  • 1/4 cup packed fresh cilantro, chopped
  • 3 tablespoons fresh lime juice
  • 2 tablespoons avocado oil or light olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon minced canned chipotles in adobo sauce
  • 1/2 teaspoon salt
  • 2 avocados, diced
  • Tortilla chips

Directions 

Combine first 10 ingredients, stirring until well blended. Fold in avocado, and serve with tortilla chips.
