RECIPE: Cuban-Style Guacamole With Pineapple

In light of the ill-fated swine flu, politically known now as H1N1, Mexico and their people have been getting
a bad rap. I’ve read all sorts of vile and crass statements toward both Mexican nationals and Mexican Americans. Truthfully, I think the swine flu is a way of God smacking us in the face. Think about it.

Oh, but I digress! Mexicans, my friends, have lots to offer us Americanos! Their food is probably the most popular cuisine in America. Tacos, cerveza, Corona, enchiladas, chimichangas, Margaritas – you name it. I mean, come on, you know you will secretly drive through Taco Bell at 12:30 am, after having had more cocktails then your comadres can hold in, and order up some 7-layer nacho and cinnamon twists (tho I’m not too certain those are authentically Mexican…). I’ll admit that I, myself make a run for the border every blue moon. But since I do cook and pride myself on being damn good at making some classics, I make Mexican food at home! It’s so much better! And since us gringos are celebrating Cinco de Mayo today (not that Mexicans really care or toast up in that country), I offer a scrumptious, creamy bite into all of guacamoles!

I figured you’ll get your share of tequila shots and margaritas from your local bar later tonight!

Straight from Puerto Vallarta, Mexico, I ate all of this smooth and varying guac (see pic above) a few months ago. And from my cocina, here’s a a tried and true recipe for you adventurers!

CUBAN-STYLE GUACAMOLE WITH PINEAPPLE

This recipe is good for about 5 people. Double if you want to feed the masses.

* 2 Haas avocados
* 5 tbsp cilantro, finely chopped
* 2 garlic cloves, minced
* 1/4 cup red onion, diced
* 2 tbsp olive oil
* 2 tsp salt
* 2 tsp black pepper
* 1.5 cup fresh pineapple, small chunks
* 1/4 cup red pepper, chopped
* 1/4 cup tomato, diced
* 1 tsp cumin * (you don’t have to, but I think it’s great to add)

Preparation:

Cut avocado in half and remove seed. Place in medium serving bowl, scooping out all of the avocado with a teaspoon. Mash avocado with fork, allowing some chunks to remain. Mash & stir longer if you want a smoother dip. Add cilantro, garlic, onion, tomato, pineapple, red pepper, salt and mix well. Add olive oil and pepper to taste. Mix again. Serve and please do enjoy! Serves about 5.
