  • 2 tbls unsalted butter
  • 1 cup fresh raspberries
  • FOR COMPOTE
  • 1 cup fresh blackberries
  • 1 cup fresh strawberries - diced, without stems
  • 1 cup fresh blueberries
  • 1 tbls unsalted butter
  • 1 tsp vanilla extract
  • FOR CREAM
  • 1 cup heavy cream
  • 1 tbls Jack Daniels Honey
  • 3 tbls powdered sugar
  • 4 sprigs fresh mint as garnish

Instructions

For the cake:
  1. Slice 8 1-1 1/2 inch slices from the pound cake. From each slice, using a cookie cutter, cut a circle from each slice of cake. Set the circles aside.
For the compote:
  1. In a large, heavy-bottom saucepan, add the berries and the extract as well as the sugar on high heat. Cook for 10 minutes or until the berries break down. Then, fold in the butter until melted. Set aside
For the honey cream:
  1. In a mixing bowl, add cream, Jack Daniels and sugar. Mix until siff peaks form, set aside.
For browning the cake:
  1. In a medium nonstick pan over medium heat, melt the butter. Once the butter is hot, place the cake rounds in the pan and saute 45 seconds to a minute on both sides. Remove and set aside.
For serving:
  1. On a plate, place 2 cake rounds. Spoon 1 1/2 tablespoons of mixed berry compote over the rounds, and top with the cream. Garnish with fresh mint sprigs.
