I love tropical locations and I love to cook, so when I got a chance to go to Jamaica and take a cooking class, I almost couldn’t contain my excitement. Over at the Plantation House in Ocho Rios, Jamaica, not only do you get to tour the beautiful grounds filled with local herbs, but you can sign up to take a cooking class that shows you how to cook up authentic jerk chicken, callaloo, coconut shrimp and festival (a Jamaican dumpling).

All the flavors and spices were intimidating, but the instructor, Adra made it all easy to understand and cook. I promise you that I have made the coconut shrimp dish at least three times since the first time. Check out these easy-to-make dishes that are sure to make your mouth water!
