Cooking With Coconut Oil

Known for its numerous wellness and beauty benefits, coconut oil has been named “the healthiest oil on earth” by nutritionists. Its unique combination of “medium chain” fatty acids (which are metabolized differently than most other fats) help to speed up metabolism, are easily digested and convert into energy. I usually slather my body with this magical oil for a yummy smelling moisturizer however cooking with it is fun too.

Check out Carrington Farms’ Organic Extra Virgin Coconut Oil and use it as a healthy and delicious replacement for butter or fat next time you sauté vegetables or roast sweet potatoes. However my favorite way to play with coconut oil is by adding it to my smoothies – this fruity inspired pina colada smoothie is everything ladies.

Berry Coconut Colada Smoothie

Ingredients:

1/2 cup frozen strawberries

1/2 cup frozen pineapples

4 oz plain Greek yogurt

1 cup milk (soy or almond variations are fine too)

2 tablespoons extra virgin coconut oil

Directions:

Place all ingredients in your blender. Blend until smooth. Serves two.

 

Sweet Treats With Chia Seeds

Looking to get more omega-3’s in your diet but super tired of only chomping on salmon? Then invite chia seeds to your dietary party. These tiny seeds are the richest plant source of omega-3s (and P.S. they contain even more omega-3s than salmon). They help to quickly and easily metabolize belly fat. High in calcium, iron, potassium, fiber and antioxidants, chia seeds are truly a superfood in every essence of the word.

Try adding Carrington Farms Chia Seeds to salads, cereal, yogurt or smoothies – and if you are really trying to beat your sweet tooth, whip up this chocolate version of chia seed pudding for a sweet treat sans the cheat.

Chocolate Chia Seed Pudding

Ingredients:

2 tablespoons cocoa powder

2 tablespoons brown sugar

1/4 cup chia seeds

1 cup milk (soy or almond variations are fine too)

2 teaspoons honey

Directions:

Mix cocoa powder and brown sugar together in a bowl; stir until no lumps remain. Fold chia seeds into the mixture. Pour milk into the bowl and stir. Let the mixture sit a few minutes before stirring again. Repeat resting and stirring a few times over the course of 20 minutes. Cover the bowl with plastic wrap and refrigerate 2 hours to overnight. Drizzle honey over the pudding before serving. Makes a single serving.
