Ingredients:
5 c diced cooked chicken
5 c chopped celery
6 oz slivered almonds
1 bunch green onions, sliced
4.5 oz can chopped green chiles
2.25 oz can sliced olives, drained
2 ½ c shredded cheddar cheese, divided
(1 c mayo)
1 c sour cream
Quick cooking white rice
2 – 16 oz bags frozen sweet peas
2 – 6 oz boxes strawberry Jell-O
2 – 15.25 oz cans sliced pears, drained
12 oz cool whip
Directions:
In a very large bowl, combine chicken, celery, almonds, onions, green chiles & olives; add 1 c cheese. In a small bowl combine mayo & sour cream; add to chicken mixture & toss to coat. Transfer to greased 3-qt baking dish. Sprinkle 1 ½ c cheese. Bake at 350 for 20 – 25 min or until heated through. Cook rice & peas according to pkg directions.
