Aromatherapy Rose Berry Sabayon

A sabayon is a sweet wine sauce thickened with egg yolks. For this recipe, you macerate the berries in rose hydrosol with sugar, and then add more rose hydrosol to the sabayon. Long used in Europe, rose hydrosol has become more and popular in the United States, particularly because of its digestive properties. In this recipe it also adds a subtle but powerful depth to a low-fat dessert that is rich in antioxidant berries.

Ingredients:

Berries:

3 to 4 cups fresh mixed berries

1/2 cup simple syrup

1 tablespoon culinary grade rosewater

zest from 1 lemon

Rosewater Sabayon:

4 egg yolks

1/3 cup sugar

1/2 cup Riesling or white zinfandel wine

1 tablespoon culinary grade rosewater

Directions:

To macerate berries: combine all ingredients for berries in a medium bowl.

Carefully stir until well combined. Cover and let berries macerate in the refrigerator for at least 1 hour.

Remove from refrigerator 20 minutes before serving.

To make sabayon: In a stainless steel bowl with sloped sides, whisk together egg yolks and sugar until light and fluffy. Add the wine.

Place bowl over a pan of gently simmering water and whisk constantly until the mixture is hot and thick enough to coat a spoon.

Serve berries in a wine glass with warm sabayon. Go the extra step and lightly caramelize the sabayon with a kitchen torch.

Liquid Diet: Cool Rose Juice

Rose has a long history of use in folk remedies, and the flower’s healing properties are well documented. Make it part of your liquid diet, or just enjoy it as a supplement to your regular regime – in liquid form, rose can be used to lower body temperature and relieve thirst. Beating the summer heat is a breeze while drinking a refreshing glass of cool rose juice.

Ingredients:

1 1/2 cup freshly picked rose petals

3/4 cup boiling water

1/4 teaspoon cardamom seeds

3/4 cup sugar

1/4 cup strained fresh lemon juice

2/3 cup pomegranate juice

5 cups cold water

Preparation:

Crush the rose petals with a mortar and pestle and place them in a large bowl. Add the boiling water, then pour the mixture into a metal container and add cardamom seeds. Set aside for at least 8 hours. Pour the rose-cardamom water through a muslin lined strainer placed over a bowl. Add the sugar and mix until sugar dissolves. Combine with the rest of the ingredients in a pitcher and stir well. Serve in a glass half filled with crushed ice.
