One of our favorite rappers Heather B recently stopped by our offices and was gracious enough to bring us some cupcakes.  Let us say, these cupcakes were sooo good, we begged for her recipe, so we could share with our readers. This morning, when we opened our email, guess what was waiting for us??? Yup, the recipe.

Hey Everyone,

I LOVE to make cupcakes! Sometimes from scratch, sometimes from the box, sometimes I mix&match the box with the scratch.

No matter what the result is the same; Slammin’!

So here are two recipes for MY chocolate-red cupcakes; One from scratch (the one I do MOST often) and a time saver from the box.

Heather B’s Chocolate-Red Cupcakes w/ Cream Cheese Frosting

To Make 24 cupcakes, Pre heat oven to 350•

Then you’ll need:

*2 sticks of unsalted room temperature butter

*1 1/2 cups of sugar

*2 ounces of red food coloring

* 2 eggs

* 1 1/2 cups of buttermilk

* 1 teaspoon of vinegar

* 1 teaspoon of pure vanilla extract

*2 1/2 cups of all purpose flour

*1 1/2 teaspoons of baking soda

*2 Cupcakes/Muffin Pans

*Paper Cupcake Holders

*1 Ice Cream Scooper

* 1 Bottle of red wine

*1 Best of Teddy Pendergrass CD

NEXT:

1. Pop in your Teddy Pendergrass CD.

2. Then  mix together (with a mixer) butter and sugar.

Once mixed, add in food coloring, cocoa powder and salt.

3. Next, (in the same bowl) add your buttermilk, vinegar, vanilla, flour, and baking soda.

In a separate bowl crack your two eggs, then add them to prevent any shells from entering your batter.

4. Mix  ingredients together until completely smooth, but don’t over mix.

5. Grab your cupcake/muffin pans, and  line them with the cupcake holders.

6. Use the ice cream scooper to collect your batter and fill the cupcakes holders 3/4 full.

7. Bake the cupcakes for 15 to 20 minutes or until a toothpick inserted into the cupcakes comes out clean.

*FROST CUPCAKES WHEN

THEY HAVE COMPLETELY

COOLED.

7. NOW, pour yourself a glass of wine, you’re Almost done!

Cream Cheese Frosting

You’ll need:

*1 Stick of (room temperature) unsalted butter

* 1 package of Philly Cream Cheese: About 8 oz

* 2 1/2 cups of powdered sugar

* 1 teaspoon of pure vanilla extract

* 1 1/2 cup of crushed walnuts or almonds

NEXT,

1. Mix together cream cheese and butter together with a mixer on medium speed until the combination is smooth; about 3 minutes.

2. Add vanilla extract and make sure all of the butter&cream cheese mixture from the sides and the bottom of the bowl are being mixed in evenly as well.

3. Slowly add in the powdered sugar and depending on your desired level of sweetness and thickness continue to add and mix it in.

4. Spread frosting on  with a butter knife, spoon, spatula or you can pipe the frosting to decorate your cupcakes.

5. Once each cupcake is decorated with the frosting, you can add your preferred nut; walnuts or almonds.

6.  Refill your wine glass, place your cupcakes on a beautiful cupcake stand, and sing along to My Latest, My Greatest Inspiration by the late great Teddy P.!

Time & Money Saving Box Version

Chocolate-Red Cupcake mix:

1. One box of Devil’s Food Cake Mix.

2. Add 2oz of red food coloring.

3. Follow ALL directions on the box

Frosting:

1. Buy one container of Betty Crocker Whipped Cream Cheese frosting.

2.  Crush one bag of walnuts or almonds and decorate cupcakes after frosting.
